The cycle supper club: The Rhynd shines light on Fife produce

‘Importing food into the United Kingdom produces nearly 19 million tonnes of CO2 every year. It’s 55% of the carbon footprint of all the cars in the country doing, on average, 6000 miles a year,’ Ed Foster, owner of The Rhynd in Fife tells me.

It was these statistics that inspired Ed and head chef Jack Baldwin to create a series of Chef’s Table dinners using only ingredients from Fife.

Named The Rhynd’s Cycle Supper Series, Ed and chef Jack will be cycling around Fife in a day to collect all the produce they need for the dinner.

The pair will be making stops for salt from the East Neuk Salt Company, cheddar cheese from St. Andrews Farmhouse Cheese, whisky from Kingsbarns Distiller, lobster from St Andrews Harbour, beef from Blagove Larder and gin and liqueurs from Tayport Distillery.

The Rhynd consists of a wedding venue, gym, clay shooting ground, accommodation and café.

Owner Ed loves to hero local produce, and they not only grow their own vegetables and herbs, they rear their own Tamworth and Mangalitsa pigs.

Heading out to collect the ingredients on 14 October – ahead of the first Cycle Supper on Friday 17 October – Jack is then tasked with making an amazing six-course fine-dining menu with what they have.

‘Fife’s larder is bursting at the seams with delicious produce, but we can’t use sugar, chocolate, pepper or any spices,’ Ed said.

‘We won’t be going to shops – we are picking up raw ingredients from source.

‘The only ingredients we can’t pick up from source are milk and cream due to Scotland’s law that it is illegal to sell raw milk. We will pick these up from Balgove, and they will be from Fife.

‘While many farm to fork dining experiences quite rightly hero local produce, almost none will abstain from using a single ingredient they can’t get on a bicycle.

‘It is certainly a challenge, not least because Jack has never been near a gym. And I swore never to get on a bicycle again 10 years ago. It is safe to say that neither of us is an athlete.’
