Schloss Roxburghe hosts series of pop up dinners with some of best chefs in the UK

Schloss Roxburghe in the Scottish Borders is hosting a series of pop up dinners with some of the best chefs in the UK this summer.

The Guest Chef Series will bring together Executive Head Chef Dan Ashmore with Allister Barsby, James Sharman and Luke Fearon at the resort’s fine-dining restaurant, Sunlaws.

Each experience will centre on a specially created tasting menu.

 

Allister Barsby – 2 August

Allister Barsby

Barsby is a chef-director who holds two Michelin stars for his restaurant Hide and Fox, located in Saltwood, Kent.

The menu for his evening opens with snacks including Green Tomato Gazpacho with jalapeno and basil, Tartlet with Ragstone goat’s cheese and onion, Estate Venison Merguez, and Ox with horseradish and caviar croustade.

James Sharman – 22 August

James Sharman

Sharman is known for his culinary innovation and global ventures. He began cooking professionally at just 15 years old, later honing his craft under Tom Aikens in London before joining the team at Noma, widely regarded as one of the world’s most influential restaurants.

After honing his skills at the acclaimed Noma, Sharman gained further recognition through his ambitious One Star House Party project – a series of pop-up restaurants in 20 different countries over 20 months.

Luke Fearon – 25 September

Luke Fearon

Fearon’s cooking is grounded in seasonality, provenance. It aligns closely with SCHLOSS Roxburghe’s focus on locally sourced and estate-grown produce.

In 2017, he became Head Chef at the Michelin-starred Treby Arms in Devon, where he gained recognition for his creative approach to regional cuisine.

Following his time at the Treby Arms, Fearon founded the Devon Food Movement, a pop-up dining concept celebrating hyper-local ingredients sourced within a five-mile radius of each event. He later joined the Michelin-starred Àclèaf at Boringdon Hall.

SCHLOSS Roxburghe’s Guest Chef Series continues through 2026, with further chef collaborations to be announced.

Each tasting menu costs £110pp complete with a pre-dinner champagne reception, with an optional wine pairing for £55pp.
