Ondine Oyster & Grill St Andrews hosts series of dinners with UK’s top chefs

Acclaimed chef Roy Brett will welcome some of the most exciting chefs from around the UK to Ondine Oyster & Grill St Andrews for Ondine & Friends.

Running until December, the series of collaborative dinners will feature chefs Roy has met throughout his career, whose talent and creativity have inspired him, and share his passion for British seafood and seasonal produce.

Ondine Oyster & Grill opened in 2025 within the newly restored Seaton House in St Andrews, bringing executive chef, Roy Brett’s seafood led dining experience to the Fife coast.

Building on the success of the original Edinburgh restaurant, which opened in 2009, Ondine Oyster & Grill celebrates Scotland’s natural larder with a menu inspired by the exceptional seasonal produce from land and sea; including native oysters, shellfish and sustainably sourced fish, alongside prime cuts of meat, seasonal vegetables and Roy’s signature dishes.

On 2 December, Roy will welcome celebrated chefs and friends Mark Hix and Mitch Tonks. Mitch, chef owner of The Seahorse and Rockfish Group and Mark who owned HIX Restaurants visited Quinta de la Rosa in Portugal’s Douro Valley in 2009. During the trip, the pair conceived the idea of creating a wine designed specifically to pair with seafood. That vision led to the launch of Tonnix, a collection of carefully selected craft wines created to complement the finest seasonal produce.

Mark was Roy’s boss and mentor in the early days of his career and has collaborated with both Mark and Mitch over the years to champion British seafood.

Guests can look forward to an evening of outstanding cookery, warm hospitality and shared stories. The menu will feature each of the trio’s signature dishes, expertly paired with wines from the Tonnix collection. Dinner is priced at £65pp and can be upgraded to a Deluxe Dinner, Bed and Breakfast experience from £500, based on two people sharing.
